Model Petit Levain
Description:
Petit Levain 300-liter refrigerated stainless steel tank ensures consistent levain or poolish every day, giving you a product with a longer shelf life, natural mold inhibition, and a better crumb without the need for expensive additives. This machine will control the PH very well as they provide a controlled environment for the bacteria to grow in. This is the key to consistent PH. As long as the proper amount of mother is added to the flour and water, your PH will be the same daily.
